Quinoa Burger


(for 12 – 15 burgers)

1 1/4 cups of quinoa, (white, red and black)

1 3/4 cups of vegetable broth

2 Tbsp coconut or avocado oil

2 medium sized carrots, finely grated

1 onion, finely chopped (or 3 spring onions)

2 Tbsp chopped parsley, cilantro and basil (or any herb you like)

1 cup almond flour

Salt and Pepper


3 Tbsp whole wheat flour mixed with 6 Tbsp water (or 1-2 eggs, depending on storage))


Rinse the quinoa with hot water. Bring the vegetable broth to a boil. Add the quinoa and cook over low to medium heat for 15-20 minutes until it is completely dry (but not burned!)

Heat the oil in a pan, add the onions and carrots and sauté for about 5 minutes. Remove from heat and add the herbs, almond flour and quinoa and mix well.

Add the mix of whole wheat flour and water (or 1-2 eggs), season with salt, pepper and nutmeg to taste.

Form the mix into 12-15 burger patties and cook in the pan or in the oven at 390ºF for about 40 minutes.

If you like spicy food you can add 1/4 – 1/2 tsp of red pepper flakes to the mix.
